Many, I'm sure have multiple dreams in one night, I myself have had three in one night on several occasions. What dreams are, is the thoughts from your your previous day being sorted in different "categories" of your brain, the reason, I think you can have multiple dreams in one night is because something, anything could have disrupted your dreaming sequence, so your brain will start fresh. I find the majority of my dreams have something to do with at least one of my thoughts the previous day. By sleeping a normal sleep, it allows your body to have more time to go into a deep restful sleep which allows the brain more time to "dream". By sleeping late at night than napping later on, your brain does not have as much time to sort out your thoughts, therefore, your quality of dreaming will not be nearly as "good". I used to break up my sleep patterns in a similar way , and also found that by sleeping a full night I too have more and remember more dreams.

Oh sweetie, please don't worry about such a thing. My dreams are the most messed up. I wake up every morning and tell my husband., "I had the most messed up dream..." After wards he will look at me like I am crazy. My mother won't even listen to any of my dreams. That started when I was in the 9th grade. I am 33 now.
When I remember my dreams the next day, it starts off as one, goes into another three or four different, and then somehow, at the end of the dream my mind has found a way to tie them all together. Remembering them is a gift I think. Because they all have told me that they wish that they could remember their dreams like me. But not have the same.
Don't worry about, take it as a good thing. I cant tell you facts, i can only tell you from experience.

Everyone has multiple dreams per night. One reason that we don't remember them is that we place so little significance in dreams. However, some African/Pacific Island cultures believe that dreams are a form of prophecy and/or communication with the dead, and they have trained themselves to recall dreams. They do such with vivid detail and great accuracy.
If you are woken up during your REM stage (which is the dream stage,) you tend to be able to grasp at dreams and remember if you make an effort. Since the amount of time spent in REM sleep increases proportionally as the sleep cycle goes on, then your new sleep habits may just mean that you are in the dreaming stage more.
EDITED to add - Dreams occur in real time, if you didn't know. You can't have "thousands" of dreams in the common usage of the word, only perhaps thousands of random brain-activating, dream-inducing neuron firings.
You are probably remembering more dreams because of the new sleep cycle that you have adopted. Or perhaps you are just becoming more aware of the dreams, which in turn make you remember even more. My psych prof never used to remember his dreams. He actually attended a dream seminar, in which they gave him strategies, methods, and training to remember dreams. Now he claims to remember 4-5 a night, which is the highest rate I have ever heard of.

It happens to everybody, including me. And having them consecutive nights is nothing that special. Usually I get a streak of nights with at least one dream, while other times I go a lot of nights without a single dream.
And now that I think of it, I have gotten dreams a lot more often when I went to bed at normal times, so that could be the reason. Maybe those few extra hours do mean something else besides being more awake during the day.

There are 4 stages of sleep: 1, 2, 3, and 4. 1 is a very light sleep all the way up to 4 which is a very deep sleep. As you sleep, the stages you are in fluctuate this way: 1, 2, 3, 4, 3, 2, 1, 2, 3, 4, 3, 2, 1. Every time you hit stage 2, you are experiencing rapid eye movement (REM), where your eyes dart around more quickly than you could possibly do voluntarily. This is when you dream, and you can hit stage 2 easily 10 to 15 times in one sleep session.

I wake up several times a night due to bladder pressure and have to get up to relieve myself. I frequently wake up multiple times fresh from a new dream. The best reason I ever heard of for dreaming is there's no reason not to. You're asleep and you're not doing anything anyhow. However dreaming got started, there would be no evolutionary pressure to stop.

everyone has TONS of dreams a night, we usually only remember one of them. We dream at an extraordinary speed, this is how you can have a whole dream backing up the sound of an alarm clock or whatever the case. Its perfectly normal.

most of the time i have more dreams per night when my brain is "buzzing"
for example, if i'm stressed out about work/life/family, and my thoughts are constantly going a mile a minute, i am far more likely to have a large number of dreams per night as opposed to a normal, non stressed out night.
i think, personally, that this is due to the fact that our brain creates dreams based off of our thoughts, IE feeling out of control in life causes us to have a dream that our teeth are falling out... therefore, the more stresses, the more dreams.

The reason is you have a special ability to remember. Most people do not, or they only remember a dream when they wake from it in the morning.
There may be something your subconscious wants to tell you.
