While smoking you don't taste things the way that non-smokers do. Those who cut back on salt or sugar were probably not tasting it while smoking--but after quitting, realized that things were very much too salty or sugary.

I believe this is based on personal experience, and would simply be a coincidence. Typically, in fact, people experience weight gains after they quit smoking, often related to eating more sweets and such.
I suppose you could assume that if a person was making one very healthy decision that they would also make the healthier decisions for their diet. You could also attribute it to having a better sense of taste and not needing to use as many flavor enhancers, but again, I assure you that it's simply coincidence.
