Or if you'd prefer to use the word knowledge I'd say
Ultimately, I want to gain as much knowledge as possible about Science, Religions and Anthropology.
Can you add to your sentence and tell your audence "how" you will gain this knowledge? for example, "By living in the Amazon jungle, I anticipate I will gain a great deal of knowledge about environmental science, primitive religion and native __ behavior."
Please consider that your statement sounds awfully broad. What are you studying? Science could be anything from biology to zoology to astronomy; religions - sheesh! and even anthropology covers many, many topics! Good luck.

I'll assume this is for a college application personal statement.
"My three main areas of interest are science, religious studies, and anthropology, and I look forward to learning as much as possible about each of them throughout my college career."
As one other respondent noted, narrow down your anticipated emphasis in science - chemistry, physics, biology, bacteriology, genetics, medical science, earth science (geology). And consider what you would like to do in science (planning to attend medical school, for example, is very different than earning your B.S. and testing blood in a hospital lab is very different than conducting graduate-level scientific research). When you're writing (unless you're writing for a politician), remember that specific and detailed = better. (But fancy and out-of-place words such as 'ultimately' are not always better. There is absolutely nothing ultimate about college.)
