earth science is much more broad in relation to the functions of the planet. Geology is much more focused on the minerals, composition and structure of land, and rocks that compose the earth.

There isn't a great deal of difference between Earth Science and Geology. I have a Earth Science major and work as a Geologist. I think some of the differences would be Earth Science has more environmental aspects to it where as Geology would have more structural and chemistry.

No difference really, Geo - Logy, literally means the study of the Earth, however these days geology generally describes the science of rocks and land forms as well as crustal processes.
Palaentology, the study of fossils and atmospheric science are both related to geology, but are sub branches of the study of the earth, they are therefore refered to as Earth Sciences because they are all essentially related.

My university is the opposite of Mark V's. I have an Earth Science degree, but have learned little more than how minerals and different types of rocks are formed and transformed. My Environmental Science courses, however, taught me a broader range of subjects like climatology, oceanography, and biology.
