The most significant food product from the Gulf of Mexico is shrimp.

Most of the heat in chilis is in the seeds. Within the entire pepper is capcasin* (the ingredient in pepper spray and arthritis creams).

*Check my spelling on this one. Pronounced "cap-ZAY-sin"

I know that seeds is one of the answers. All you have to do is eat a hot pepper and once you bite into the seed - fire. Peppers sold without the seed with them are not as hot. I don't know what the other could be unless it would be the type of climate the chiles are grown in. Good luck.
