You need to get a heap of lavendar flower heads. Cut them off the stems, dont pull them off. Lay them on some newspaper and put on a window sil or in a light room.
Leave them for about 7 days, then put them in a heshan bag or in a wooden box.
You can over time when the smell wears out, you can add a couple of drops of lavendar oil to refresh.
Also don't keep them in a glass bowl, or plastic as the smells goes away much quicker.

I grow lavender and what I do is pick a bouquet and put it in a vase under a lamp...the heat from the lamp causes the lavender to spread throughout the room. This will last up to one month. If you want to do real potpourri you need to get some essential oil of lavender and put it in a mesh bag or cloth with the lavender flowers. Put a nice ribbon around it and put it in a drawer.

The correct way is to cut the long stems, then hang a bundle up somewhere to dry. (Usually within a week depending on atmosphere).
When dry, remove the seed heads (the flower part) from the stems and put them in a small bag of cloth.
If you stick a bag in with your clothes - smells nice.
**Note - pick the flowers within a few days of them opening.
