The origin of the Gingerbread Cookie actually lie with Medieval Crusaders, who returned to Europe with the previously unknown spices and sugars. Catholic Monks began baking "theme" cakes of Gingerbread depicting specific Saints on their festival days. Later, in the seventeenth century Netherlands, this practice evolved into the Christmas tradition of baking cookies in the form of people of animals, a tradition which came to America with the original Dutch settlers.
