Water is the universal solvent. This is because of its ability to dissolve most of the substances on the earth.
This is because of the polar nature of the water (H----O---H)
Oxygen is highly electronegative(second only to Flourine)
Since most of the substances are polar and the property that like dissolves like , most of the chemical reactions make use of water as a solvent.
This ability of water is very important because the plants take in nutrients from the soil only when they are dissolved in water.
These plants the provide food for our survival.

because its a dipolar molecule its perfect for ripping up most ionic bonds except those of oils etc also the way it is shaped
