Anything by Iron Maiden usually works well, "The Prisoner" or "Run For The Hills" for example.
Also anything by Rainbow is great too as Blackmore's style and dramatic playing lends to great air riffs.
The song "Motorcycle Emptiness" by the Manic Street Preachers is another favourite of mine for the old stringless chords.
I think that my overall favourite will have to be "The Ace Of Spades" as it is a fast powerhouse of air guitar heaven.

Deep Purple's "Smoke on the Water" is definitely up high on my list. Or The Who's "Won't Get Fooled Again", as that lets you do the windmill.

As for being an olympic sport, there have in fact been some air guitar competitions! Check out http://www.airguitarusa.com/

Sabbath 'Paranoid' and almost anything raunchy by the Stones (air ciggie an essential extra for this...) If you won the olympic gold, would you be allowed to air along with the anthem on the podium?
