To put text files onto iPod, it must first be enabled as a hard disk (see Using your iPod as a hard disk).
1. Save a document in any word-processing application as a text (.txt) file.
2. In the Macintosh Finder or in Windows Explorer, drag the file in the Notes folder on iPod.
Tip: Every word processor has a different way to save a text (sometimes known as ASCII or plain text) file. Check the manual or online help for your word processor. The example pictures below are for TextEdit in Mac OS X and WordPad in Windows XP.
In TextEdit: From the Format menu, choose Make Plain Text and then save the document.
In WordPad: On the File menu, click Save As. Then from the Save as type menu, click Text Document and then save the document.
To view notes on iPod:
Select Extras > Notes
The Notes feature is available on iPods that have a dock connector. This includes iPod mini, iPod (with Dock Connector), and iPod (Click Wheel) models.

you have to set your ipod as available for hard disk use
then you can add a notepad file to the ipods notes folder.
you cannot edit notes on the ipod

when you charge your ipod, and icon should appear on your desktop.
click on it. then click on noteson the menu, and then click new, and then type your note, sync your ipod, and viola!

You need to use post its.
You can't fit many on an ipod though, they keep getting smaller.
