Bellagio and Wynn are the absolute best. I've heard good things about Mirage but never been there myself. Alladin has this sushi/seafood place that was good but I'm not a big sushi fan. Luxor has a good breakfast buffet at a reasonable price. I wouldn't recommend Excalibur.
Bellagio : Has the best desserts, good selection of meats. They have lamb chops, buffalo, and different cuts depending on the day you go. Good quality and service. $25-30.
Wynn: Has a lot of variety, decent desserts, nice selection of meat. Good quality and service. $25-30.
Rio: A good variety but quality not as high as the above two.
Forgot how much it cost.
To Dai's: The one at Alladin. Seafood. They have lobster at night. It was like $20 for lunch if remember right.
There are a few brazillian grill places in Las Vegas too that are good.
Also, check out the casinos off the strip. They have the best value. Decent food at very low prices. When I say off the strip, I mean the ones the locals usually visit and not the ones like Terribles (lousy as the name would suggest).
When I'm in Vegas, I usually go to Bellagio at least twice a week. It's tied with Wynn in my book. Wynn offers better savory dishes while Bellagio offers better desserts IMO.

I thought the breakfast brunch at the Hilton was great. Way better than it was rated in the guides and sites. And I like to think I am somewhat fussy.....
I thought the buffet at the Aladdin was not all that it was hyped to be. Except for the meat and the dessert stations, I thought it was lacking in variety and quality. I was all hyped for the middle eastern stuff to try and they had hardly anything. The skewered lamb and chicken were to die for though.....if I have to go to that one I think I will just make chef salads out of that meat.
I want to try the Rio seafood buffet next time when I go in April.

When I was in vegas (2002 or was it 2003?) I liked the buffe at RIO most. But a general rule is the better hotel the better food and buffes. Another tip: If you can stay out of mayor american holikdays and mayour convents. Then the ques are killing (No, I am not kidding, its like 45 minites of queing for just about anything!) Johan

without question, the WYNN buffet is the best! it has all kinds of delicious gourmet food. the food they offer isn't the typical type buffet food. it's very classy and upscale. it's a little pricier than many other buffets, but considering the quality of food you get, it's worth it for sure.

Very best is the Sterling Brunch which is served Sundays only at Balley's. It is expensive but includes things like stone crab claws, lobster, rack of lamb, caviar, beef tenderloin, excellent champagne, scrumptous desserts, and super service.
Take a couple of chips that you have won and splurge on this brunch.

The buffet at The Luxor. They have a great variety, peeled cold shrimp, prime rib, carved turkey breast, sushi, pizza and the price is reasonable.

All the major strip hotels have great buffets...including Excaliber, which has a great breakfast one. Frankly they are all over the top and off the charts....It's almost obscene how much food they have..
