Pastel Painting or Pastel Drawing are both appropriate. When I teach about famous pastelists, such as Cassatt or Degas, I use the term "pastel painting" because they are masters of the craft. If the work is less finished and more like a sketch, I use the term drawing.

I know in life drawing, when we use charcoals and pastels we just refer to it as sketching. I've never heard a specific term for creating a piece with pastels.
