Stars are generally classified by spectral type and class. The hottest of which are the O stars and are a bluish color to our eyes even though they radiate a lot of their energy closer to the violet and ultraviolet end of the spectrum. But for the sake or convenience, we call the blue-white stars. To be most accurate, an O0 (that is O followed by the number zero) since the greater the number following the letter, the cooler (comparatively speaking) the star becomes. e.g. an O7 star is not as hot as an O3 star.
Likewise, the classification of stars generally ends at M9 which is a dim red star. However, there area actually even dimmer and cooler stars sometimes called "brown dwarfs" that extend on into type R, N and S. Even so, the coolest star is actually a black dwarf (or dead star), which is a white dwarf that has lost all its heat (since white dwarfs have stopped fusion and are just really hot balls of matter) and there could be some arguement as to whether or not it can still be called a star. Most likely, however, your prof is looking for the answer "M".
As for the Sun. The sun is a G2 star. To be specific it is a G2V where the V is the roman numeral for 5 and indicates the physical size instead of the temperature.

As for the overall types of stars, try this:

O, B, A, F, G, K, M these are the Spectral Class of stars primarily, and add to those Type I, II, III, IV, V for sizes ranging from supergiant to dwarfs.
