I believe the sound you are referring to is the grunt or groan of a female tennis player. Well for starters, not only women make that noise. I've heard men make a slightly lower-pitched noise of the same derivation.
To follow that up, the noise is most likely coming from the extreme effort put into each shot. As the match goes on and the player gets tired, the grunting usually gets louder.

In the 90s many female players were highly critical of Monica Seles and her grunting noises . Claiming it was interfering with thier concentration .
As the best player of her generation Seles helped popularize this extremely annoying affectation .
Grunting is learned behavior and completely unnecessary .
Now many male players have adopted the grunt as well .
Watch and listen . Its a rare treat when you find a player that doesnt grunt . I root for them .

Its is called effort mate. Tennis is a difficult game even men make those sounds while they are in a game. For women players tennis is alot of effort. So when they make those sounds, it means that they r trying hard. It shows their devotion to their careers and game. They want to win and this is what this game is about.

Extending their arm while serving and hitting the ball does make you feel like expelling air. A breathing habit during effort in general.
But some athlete take it to a higher level unconsciouly by pure habit from when they used to show off as kids when training.

You're suppose to exhale when hitting the tennis ball. To make sure their students are, coaches tell them to grunt when they strike the ball. It becomes a habit.

Most do it because they put every ounce of strength into hitting the ball.
Some, like Monica Seles admitted a few years back, grunt to distract their opponent.
