I actually like Mon - Thurs better than the weekend. Weekends are full of tourists, weeknights are locals and celebrities. This is where I go during the week:
Mon - Jet (Industry night, lots of locals)
Tues - PURE (always see Paris here on tues)
Wed - Tangerine (Wed is the slowest night of the week, but Tangerine is always poppin)
Thurs - TAO or Tryst
Friday and Saturday everywhere is busy, Sunday is another great night too - check out Body English and Tryst.

The night life never stops in Vegas. I travel out there about 3-4 times per year.
The weeknights give everyone casinos, Studio 54 if you like dancing, more of the best shows are during the week.
Vegas has some of the best restaurants including the "Top of the World Restaurant" at the top of the Stratisphere which rotates 360 degrees each hour while you eat. Best restaurant I have ever been too but bring your wallet! $$
If you really want to get crazy there is the "Spearmint Rhino" which is a strip club for guys and I am sure there are good strip clubs for girls to go to as well.
That's the magical thing about Vegas--there is something to do 24/7 out there.

heres the secret. mostly over the weekdays you meet people from other countrys because they stay the whole week. and all of the clubs run mon-thurs as they do fri-sun. for your age group i would put the palms on top then maybe TI (treasure island). they have basicly redone themselves to be a big party hotel. have fun

Vegas is TRULY the "City that never sleeps" (forget about NY for that.) There is ALWAYS something happening there every night of the week. If you want amazing restaurants, killer shows, the hottest, most happening clubs any night of the week - it's all there.
