This may vary in people, but I believe people can be addicted to sugar and if you crave sugar, to me, cold turkey is the way to go. Bite the bullet and dry out. It is better than stretching out the agony in trying to cut back, little by little.
If you need instruction in carbohydrates, the latest Atkins book will give you more information than you ever thought you needed. If you want something a bit gentler, the South Beach book will give you good info. If you are a reader, Atkins can give you more technical stuff. He is also more hard line. At least in reading him, you will be sure of what you are dealing with. I would do the Atkins diet for a few weeks and then start the South Beach, which I would live by because that is less extreme.

What the... just use splenda!! It's not like sugar is crack or caffeine. Splenda tastes just like sugar. Geez...
