? How many choices should I offer? What about cheese & pate? What size platters should I offer?

Are you serving anything else? If not, I would count on at least 6 per person. I would do a combination of both warm and cold. There are a lot of good suggestions on allrecipes.com

I would suggest that you look up some place where you would be able to get awesome recipes on appetizers try getting your hands on this book "Readers digest guide to Creative cooking and entertaining"
It has a very wide variety of these things and you will aslo be able to get to see very awesome presentations.
there are verious recipes of pate which are not at all cumbersme had made them a couple pof days ago.
make at least 8 Appetisers per guest as this will help them have a stomach full of dinner as well. The best part is concentrate on the presentations as it helps to bring the best quailties and people apprecatie it better.

For a cocktail party of 2-3 hours, plan on 12 appetizers per person. A dinner party would dictate 6 appetizers per person.

Various cheeses are always good. Do some good swiss, like jarlsburg, some brie, some good cheddar(good, real cheddar is not orange) and some motzerella. I never do pate. It's way too messy. If you want something thats high end, do caviar. Also, Take grape tomatoes, cut off the top, scoop out the insides with a melon baller, and fill them with pre-made pesto mixed with cream cheese. Garnish with shredded parm cheese. They turn out really pretty if you use a piping bag instead of a spoon.
