Not as unpleasant as you may think. The glue is made, partly. by boiling horse bones or fish bones to get the marrow out. The horse bones smell a little musty and the fish bones smell, well, fishy. Try smelling a bone from a leg of lamb after it's been stripped of meat and left to dry for a couple of days.
