When your engine warms up, the temperature should not fluctuate more than a small amount. Check to see if the fan is running by allowing the engine to warm up in the driveway and observe if the fan comes on. If the fan comes on, check the coolant level and add coolant if necessary. Check for leaks in the system. If the above is OK, check for steam coming out of the exhaust which indicates an internal leak in the engine which could be attributed to a failed head gasket.

Change your thermostat before you crack your heads. Go buy a 185 degree thermostat and put it in.
