I would make Hamburger meat by cutting raw meat into cubes, approximately 1.5 - 2 inches. Then, I would use a meat grinder to process the meat into ground hamburger meat.
There are 'old-fashioned' meat grinders still available, for instance from Lehman's which is a supplier specializing in old-fashioned appliances and 'off-the-grid' living appliances. These grinders come with various attachments to make a coarser or finer grind, and some come with sausage-making attachments. They clamp on the edge of a table or counter, and you hand-crank them.
Keep in mind that the more surface of meat is exposed to air, the more bacteria can and will grow on these surfaces. Ground meat should be handled under extremely sanitary conditions and either consumed or frozen immediately. If cooked immediately, you can cook it medium to well. If previously frozen, I would choose well done!

you would take beef meat and beef fat and run it throught a meat grinder. once it is has been ran through a few time then you would add an attachment to the end on the grinder where the meat comes out. It makes the meat reseamble what you see in the supermarket. Then here is your recipe to make hamburgers,
Shape in to round patties
put in hot grill
cook each side for about 2 mins
put on bun and enjoy

You would put the raw meat which would be in larger pieces through a grinder to make it the consistency that allows you to form it into patties.

im not sure what's the scientific term for that.
but what's 'heat'. you simply cook the raw meat, add spices and oil to fry it and then it's ready for a bigmac.
