Mrs. Doyle's first name was actually revealed to be Joan early on in the series (albeit only in the script, and not onscreen). In the script book the writers added a comment which stated that early on in writing they revealed a lot of information which could have been a dark secret over the series, and they seemed to use this later on as in the series 3 episode "The Mainland," the mention of Mrs. Doyle's first name is obscured by other loud noises (a fire bell in the police station, and plates clattering in the restaurant), in a similar way to how The Simpsons often obscured maps which showed the exact location of Springfield within the

Mrs. Doyle is the more mysterious character. We never find out her first name (in the series, but it is revealed in the scripts book), and her marital status is always kept a mystery, although we know that at one stage in her life, she had or has a husband. She also loves making gallons of tea and cake, also sandwiches for everyone who doesn't want them.

You never actually find out in the TV programme. The only time you think you'll hear it (Episode: THe Mainland) a police siren sounds at the exact moment it's said so you can't hear it.

In the scripts for the series by Matthews and Linehan they note that she is called Joan, but thought it was funnier never to let on and have her always referred to as Mrs Doyle without a first name.

I don't think she had one, or at least I don't think it was ever mentioned. The point was that she was a stereotype of middle-aged Irish women who quite often refer to each other as Mrs. Whatever.
