Following are some of the major diff between 2000 and 2003

In 2003 you can rename the domain and domain controller which was not there in 2000

Update the user records in one shot.

Ability to disable the defualt Admin account

The former is called Windows 2000 server & the later is called windows server 2003 plus of course the 3 years.
