It is about 1400km depending on which route you take. It takes about 17 hours . I have driven it in one day from Adelaide to Sydney but always have a sleep on the way going from Sydney to Adelaide.
The quickest route is: Sydney, Gundagai, Wagga Wagga, Hay, turn left just before Balranald to Piangil, Manangatang, Ouyen, Pinaroo, Tailem Bend, Murray Bridge, Adelaide. An alternative is to turn right off the Hume Highway just south of Yass and go through Harden, Cootamundra, Junee, Coolamon, Narrandera, Hay.
A longer route is to go west from Sydney through Bathurst, Cowra, Grenfell, West Wyalong, Hay. At the other end, following the river through Balranald, Mildura, Renmark, Nuriootpa to Adelaide is longer than going the other way.

It depends which way you go but it's around 1400kms, and it takes a couple of days if you include some stops for food, toilets and sleeping.
