One stick will only take one slot leaving your PC with space to add another later for one reason!

If you already have one 512 and are wanting to go to 1gb just add 512. If it's new... 1gb is probably better since it's one stick. However if somethings goes wrong with memory you'd only have to replace one stick and could still use the machine while waiting to do that if it's two sticks
Otherwise it's trully a matter of choice. If you only have two slots use one stick so you can add more memory later if wanted.

According to tests run by PCWORLD, running 2 memory sticks of 512 was FASTER than 1 stick of 1 Gig.

Apparently, since the CPU accesses BOTH slots instead of just one

Most motherboards now allows you(or automatically does it for you) to turn on dual-channel mode if you have 2 sticks.

a) Say you have a 1GB 333Mhz stick using one slot on the motherboard. All the memory is stored in one stick, meaning one output channel with data being sent at 333Mhz.

b) If you have 2 sticks of 512MB 333Mhz RAM, you'll still have the same total of RAM(1GB combined) but they're in two slots. Meaning two output channels available at 333Mhz, meaning (theoretically)twice the amount of data can be passed back and forth by the RAM at the same time.

So yes, 2 sticks would be faster.

One other differene aside from Mrresearchman's comment, is some (Mostly only older boards) motherboards only support a single bank per memory slot, and many 1Gb sticks of memory you can get for them are double sided meaning you will only get half of your capcaity unless you get a 1Gb memory stick that has chips on 1 side. That is not a performance issue per se.. but the question does not imply performance
