let say number=x

add to 9
x+9

multiply the sum by 8
8(x+9)

subtract 11
8(x+9)-11

Let say resulting number=y
y=8(x+9)-11

To find back number x,
x = (y+11)/8 - 9

If you want a real number, it's impossible. For example if your original number was 0 your new number would be 61. If your original number was -9 your new number would be -11.

If you want an algebraic expression, you could say Jen started with x and ended with 8(x+9)-11. Or you could say she ended with x and her original number was ((x+11)/8)-9. It all depends on what you want to get.
