I'm not sure what you mean about your first question... but the amino acid most likely to be folded up on the inside of a protein in an aqueous solution is Leucine, becuse Leucine is nonpolar, and thus hydrophobic.

Glutamic acid is the one most likely to bond to cations because it has a full negative charge, and thus would bond with positively charged cations.
