Does it affect the turning and carving at all?

Yes and no.

Basically, the board is built with a profiled core shape that will affect the performance of the board. The fact that you can see it with the 3D Impression you are talking about is just to show off the core and possibly loose some weight. The topsheet design itself really doesn't do too much. However, the core it is designed around does. Some boards can have a core designed like the one you are taking about and have the same performance with a flat topsheet. Some companies just choose to show off their creation.
