the theme this year is how that works. and i don't know what i shoould do. any good simple ideas?

Borrow the brain model from your anatomy/science/biology teacher and map out on poster board the many functions of the brain and explain HOW IT WORKS, by using index cards if you have to speak about the project or if you have to write a paper, you can use your text book to write the paper, be sure and site your resources.

Take something simple like a spray bottle or something where you have to squeeze a handle to get the fluid to release... and explain how it works. Show what causes the fluid to come up thru the tube and out the sprayer by squeezing a handle. :)

How a toilet flushes. Just make a diagram, and you can make signs to point people to the public bathrooms for a demonstration.
