Jews (Judaism) believe in One God, YHWH, that He is all powerful, righteous, all knowing, and that no one and nothing is equal to or greater than He. They also believe in the Torah, His law, as a standard of right and wrong.

The Greek and Roman pagans believed in many gods (called a pantheon). These gods were limited in power, had many equals (other gods, titans, etc;), and were faliable (capable of error and wrong). Their concept of "morality" was also significantly different, although this is an area I have only just recently began to look into.

There are, obviously, many differences beyond these, but these are a few of the most important ones.
