I wonder this because the difference in price for the canvas is like 3 times more expensive for the 5 mesh...Is it really worth it?

The size of the mesh will not give more detail. The detail will be the same what you get is different sized finished pieces. If a smaller finished product is OK with you go for the smaller mesh. Have fun.
