They now have fiberglass deck boats with modified "v" hulls also fiberglass catamaran deck boats. Both have the performance to carry 6 passengers and also pull a skier. Standard aluminum deck boats can accommodate your passengers, but usually cannot tow a skier. The ride of the modified v or fiberglass catamaran is much more comfortable also. With the modified v or fiberglass catamaran you have the best of both worlds.

This depends on the type of water you will be on most of the time. Deep v for rougher water. If you are going to be pulling a skier with five or six people on board better get some horsepower. The skier isn't going to like choppy water. Not all deck boats have flat bottoms. Buy a good used boat first. They are about half the price.

Depends on the type of water. Deep V will cut through waves better but will not reach the same top speed as a planing boat. On a boat that planes on the water, the propeller is constantly in water thrusting forward. On a deep V, the water gets pushed sideward and when it gets to a speed where the propeller "catches up" with void created by the V then it will have reached its top speed (no matter how much power the engine has) because it is only pushing air or cavitating.
Generally in smooth conditions a boat with a planing hull is better for you purposes but there are also semi-planing boats that combine the advantages of both styles. Those would be better in open ocean.

i'm sorry, but many people here are wrong.
1) planing hulls include both flat bottomed and deep vee boats
2) deep vee boats are by no means faster than other types
3) the propeller acts the same way in both applications. the flow of water around the hull is slightly different, but in no way is the action of the propeller different.
with less surface area, a flat bottomed deck boat will be more efficient and thus faster for the same hp. however, this boat will be considerably less seaworthy, and will experience slamming in any sort of sea state.
the deep vee sits lower in the water and has more surface area to accomodate the hull geometry. this hull is slightly less efficient, but is much more seaworthy. It will take a much larger wave to cause slamming on this boat.
for lake use, go with a flat bottomed deck boat
for all other applications, go with a V. it doesn't necessarily need to be a DEEP vee, but having some deadrise is always a good idea.

I am in total agreement with Chris but also think you should investigate another type of hull. A Tri-hull design is very sea worthy, stable and comes in a bow-rider config most of the time. The 3 hulls combine to allow a wave suppressing attitude as well as wide stability in the water. Once the boat is up to cruising speed (or ski speed), most of the two outside hulls are out of the water and she runs predominantly on a modified V or deep V center hull. Most are designed for 6 - 8 passengers and also move almost as quickly as any purpose-built ski boat. Remember, skiing is not done a 50 mph unless you're barefoot. Most pleasure skiing is done between 28 and 35 mph.

Boating is all about compromise. Do you want stability - deck boat. Do you operate in rough water? deepV?
If you are in windy conditions and want to operate in the ocean - it must be a deep V, not a flat bottom boat.
Just to confuse you - you can have a DEEP-V HULL, WITH A DECK BOAT TOP.
My preference for 6 plus people and skiing is a GOOD BOW-RIDER.
