ID3 tags only give information about the file - they're not the same as an MP3 suffix. iTunes are very proprietary. They make it very difficult on purpose. There's downloadable software. Do a Google search on your terms.
And in the meantime, set your files to be imported into iTunes as MP3s. It takes up more space, but there are no future conversion problems. This will NOT work for iTunes files purchased from their store.

This works for me even with songs bought at itunes store:
1- Burn a cd with the songs you want to convert to mp3 (you can easily do this from itunes).
2- Download and install CdEX http://cdexos.sourceforge.net/
3- Open CdEx go to Options/Settings and where you can choose the encoder select the option "Lame mp3 encoder"
4- Load your cd and in CdEx go to "Convert/ Extract CD tracks to a compressed audio file"
Once you finish look for your mp3 files in the same folder where the program is installed, in a sub-folder called "my music"

In iTunes go to Edit > Preferences go to the Advanced tab then go to the Import tab under Import Using select MP3 encoder, adjust your options accordingly (I use 192kbps but 128k will save on space) and then go back to your iTunes library and select the song(s), right click them and select "Convert selection to MP3", let the process begin.
I don't know if this will work for songs purchased from the iTunes music store or not. But it does work for all other non-DRM formats.

I used to have Musicmatch and now I use Itunes. The only way to convert songs is to burn the songs you want to a cd then save them to itunes.
