What should you do if you calibrate a thermometer at 32 F, place it into boiling water & the temp reads 205 f?

The temperarture is supposed to be 212 F...

The steam should be 212, the water may not be (atmospheric pressure, altitude have an effect). Check the temperature at the very surface of the water. Allow it time to equilibrate also.
