Teachers now are really looking for things to do with the environment.
Try something that has to do with the air and pollution.
Some GREAT science fair project websites are listed below.
My teachers are always impressed when I show them my Bibliography!

Ask her to sit down and think of an animal that she likes. Then help her find some facts on the internet about that animal. This could also be a great thing to get on her good side. After you look the information up online print the information off. Help her find notes out of the pages. For instance "how big this animal can grow". Then you can also send a note to her teacher asking if she can make a model out of like candy or some thing like that.

If you haven't already done it before, take a pan of water and place a candle in the middle with the end above the water. Light the candle and put a jar or bottle over the flame. Explain why what happens, happens.

I am not sure as to the details but I know of one that has to do with pinapples (can and fresh). there is something in one of them that will not allow jell-o to jell. you could probably look it up but the project is quick and easy. it will only take her one day to do the project, the rest is just the writting part.
