I have thought about this exact question. I was asked today about it. I would have to say that there are three that stick out as front runners and one is a favorite of mine.
First, is Full Metal Jacket; If you have never seen it, do. The movie gives a very unique perspective on the Vietnam War. Secondly, is Apocalypse Now; Wow, I just lack the words to explain the depth of the content, it is quite good. Third, and lastly, is Platoon; People can knock it all they want, but it is a great movie. Charlie Sheen is not out of his element at all and he does a good job of detaching from conflicts with other soldiers that would drag the movie into a single-scene perspective. I really enjoyed it.
While I think all three of the listed are very good, Full Metal Jacket is my favorite. There are also others of note: Saving Private Ryan, Thin Red Line, U-571 and Das Boot.

My favorite is Saving Private Ryan or The Dirty Dozen.

My father (who is a Vietnam Vet) says the most accurate portrayal that he's seen is Full Metal Jacket.
