That player is then a free agent who can be signed by a team for a negotiated salary. It happens more than you might think. Some of those "walk-on" free agents end up being stars.
A few of the more prominent names include: Kurt Warner and Jeff Garcia, Wayne Chrebet, Priest Holmes, James "Big Cat" Williams, Derrick Deese, Pat Williams, Adam Vinatieri and Olindo Mare.
Unfortunately, the NFL is a hard party to crash and with the current draft and science of finding great players, good ones don't fall through the cracks as easily.

Exactly what this guy who looks like me said.
They also have options as far as the CFL, Arena League and Euro NFL. You would be surprised how many college football players looking to get into the NFL end up in those leagues.

If they don't get drafted and they still have a year or so of eligibility in college, they can sit out a year and return to college. But, if it is a senior then they are out of luck.
