I have filed an original 1040 last year for 2005. Then I realised that I forgot some info, then I filed an amendment (1040X).
Again I found out that there's still more info that I forgot.
Can I file a second amendment?

No limit. If there is an error, correct it. When you send in the 2nd amended return, include a copy of the 1st amended return.

The IRS is stupid and might mess things up.

Yes you can, and if it isn't right yet, you are required to.
