in Indonesia
1. a week before and after Hari Raya Lebaran
2. a week before and after Christmas
3. School holiday during June-August and December
In Singapore
1. Christmas and Chinese New Year ( December and February)
2. School holidays
The rest would be low season.
Recommendation:
September-November and March to June.
Jakarta, Indonesia is having floods now, please visit Jakarta after March for safety reason.

I'm not sure how to answer your question. For airlines the High & Low are depend on both place your departure place and arrival.
I don't know when american people choose for holiday so I can't help you with that part.
However for Indonesian our High season start around end of june/ early july to late august/early septemter. and around 15 Dec-8 Jan.
Sorry can't be more exact but that's the time when Bali most crowded. (schools holiday)

All schedule on Weekend or Holiday, Monday morning, and Friday night are high season.
Why don't you try to book in Tuesday or Thursday? It's a quite cheap fare...
