How do I get employees to drop the mentalities and functioning they learned at a previous job? I don't want to insult them or their perspective on how things should be done. But how do I get the message across that we do things differently? (Ex. when an employee takes unpaid time off we don't ask what they were doing or where they were, but a previous employer of a couple of my employees demanded a reason)

Well a personal conversation telling them it's not necessary to give you all the specifics is the quick answer. But if this is a habit hard to break maybe including protocol in your company employee manual by giving them a step by step process you expect from them. I simple ask my employees to send me an email with the time/day(s) they plan to take-off.

Why not let them help you to come up with something like a Mission Statement - let them talk about the culture of their new workplace, what they like about it, what they wish was different.
I would just start to engage them in this kind of dialogue. It will help them to feel their way into harmony with you and your objectives and give you a chance to showcase some of the ways that you are different and more open than their previous employers.

just have a company meeting and let them know of policy's and what you expect from them and respect them and keep them happy in today's world it's all about money but i tell you if you have happy employees then you will make money because they would want to come to a place were they are happy instead of a place were they miserable and see if they have any suggestions and comments
