Well, she says it a lot. It was her catchphrase, afterall. There's "The One Where Ross Hugs Rachel" where Rachel and Monica get into a fight as Rachel is packing to leave.
Monica: No-no, wait! Just let me finish, okay? This isn’t something that we just, we just impulsively decided in-in Vegas, this is something we both really want. And it is going to happen.
Rachel: It is? Really?
Monica: Yeah, sweetie.
Rachel: (starting to lose her composure) I mean we’re not, we’re not gonna live together anymore?
Monica: No.
Rachel: What? Oh my God! I’m gonna miss you so much! (Starts to cry.)
Monica: I’m gonna miss you! (They hug.)
Rachel: I mean it’s the end of an era!
Monica: I know!

I know exactly which one you're talking about but I can't remember why she said that! I know it was the season where she got really annoying though. Sorry I can't help more!
