Im making an ice cream dessert for my patisserie class as a homework assignment, and I need something crunchy in it, and it also needs to be plated with two kinds of sauces. What kind of sauces can i use and what kind of crunchiness can i combine with my ice cream?

I LOVE coconut so when I make an ice cream dish I usually make a sundae with french vanilla ice cream scoops rolled in toasted coconut. I top it with a dark chocolate sauce, a caramel sauce, whipped cream and garnish with a couple of sliced strawberries.

Depends on your choice of ice cream. I think a thin waffle cookie or other sweet crisp wafer could be used as a combination garnish and crunch element. I would probably use a berry or fruit coulis and a chocolate or caramel drizzle for a sauce. Again depends on flavor of ice cream for specific flavor combos. You could use a funnel cake cookie, but timing is crucial on those, if they sit too long they lose their crunch and reheating will harden them, so the timing can get tricky.
Another sauce alternative would be a balsalmic reduction, with the right ice cream this can be a daring and yummy approach.

A FEW IDEAS
#1 add some salted almonds to plain vanilla bean ice cream the salt and sugar mix is absolutely delicious!!!
#2 granulla with a few sugared strawberries is amazing!!!
#3 add some store bought sugar cookies and break them into peices and mix them in with the icecream using a spatulla then top it with caramel or chocolate syrup, whip cream and a cherry for a spiced up traditional sundae!

Pretzels are good for the crunchy. Plus it does the same thing as putting salt of your watermelon, sugar on the grapefruit, etc...it provides the "twang" that is noticed by your tongue and the different taste buds. A caramel sauce does real good with this, as would a butterscotch sauce.

Cut some tortillas or wontons into strips and deep fry them until golden. Sprinkle with powdered or cinnamon sugar. Use them to nest the ice cream on. For sauces: chocolate, caramel or mocha would be good if you can figure out how to make a mocha sauce.

You can also use breakfast cereal.
Some good choices:
Fruit Loops - vanilla ice cream and/or sherbet with strawberry sauce...not syrup
Cracklin' Oat Bran - excellent with vanilla ice cream and dark chocolate topping
Cocoa Puffs - vanilla, chocolate, or mint ice cream with hot fudge or other chocolate topping. Other sauces: Caramel with chocolate or Butterscotch with vanilla.
Quaker Peanut Butter - vanilla or chocolate icecream topped with hot fudge or other chocolate topping. You can also mix the Peanut butter cereal 50/50 with cocoa puffs.
You can also try Cocoa Rice Krispies but they might get too soggy.

For Crunchy: Pecans, crushed oreo cookies, crushed chocolate-dipped pretzels, granola, and crushed peppermint candies are a few ideas.

For sauces: Caramel sauce, Fudge sauce, strawberry glaze, and butterscotch sauce.

Use caramel and chocolate sauces and you can put cookies, nuts, graham crackers or some kinds of crunchy candy bars with it.

cinnamon toast crunch is great w/ vanilla ice cream & caramel shell topping and chocalate also since u need 2 sauces

break up some meringue nests for the crunch and press stewed apples /strawberries through a sieve for the two sauces thicken with a wee bit of arrowroot powder
