I wrap the food well in proper freezer bags, even bought a machine to seal the bags, why does this happen?

Somehow, air has to be entering the bagged area. Water, then ice cannot form in a sealed freezer bag unless there is a leak to allow the formation of ice. Try expelling the air from the freezer back before placing in the freezer. If the seal is 100% good, ice won't form unless you placed "warm" or "hot items in the freezer. This can create ice after the item freezes....

Air pockets in the storage container (or in between freezer wrap and food) help to wick away the liquid in the food. Notice how freezer burnt food is all dried out and whitish, yet there's ice crystals all around it? The ice crystals used to be the liquid in the food! You can prevent this by using one of those vacuum-sealer food storage thingies, or using up your well-wrapped frozen food on a regular basis.

You may have your freezer set too high...too cold in other words. Are you getting a lot of frost in there too? If so try adjusting the gauge down a notch and see if that helps. Alternatively invest in a range of plastic boxes to protect your food.

Food usually goes like that if you have stored it for too long...Or,
sometimes we take stuff out to reach something else at the bottom...the stuff thaws a bit or the wrapping tears allowing a patch of the food to be exposed to a higher temperature. Then, if we refreeze it; it makes it to look the way you described.

Use quality freezer bags, exclude air,then place in plastic containers. Check freezer is not too cold.

make sure there are no holes in wrapping, eg by padding sharp ends before packing, & not being too rough when turning over packets. don't leave items in freezer longer than recommended. use gd quality freezer bags & closers, eg from Lakeland.

Make sure the food is dry before you place it in the bag. Thats the only thing i can think of.

it sounds like you have got your freezer on to high turn it down just a little.
