you can get the kids into groups and step out different shapes, which will also help them with degrees. if you have groups of four, get them to step out a square (4 points, 90deg angles). 3, a triangle (3 points, 120deg angles), etc.
each side of the shape should have the same number of steps and you can use each kid on each of the points of the shape. alternately, you can give them a marker (e.g. coin) and see if they can return to the start without cheating (the smaller the object the better!). Good to make it challenging! maybe try 5 or 6 sides and work out the angles.
you can also introduce directions...North, S E W, etc
A good way to get them out in the open, doing something challenging and fun!

Ask the boy scouts! Seriously, the Scout Master will have several lessons for you. Or you can ask someone in the Army to come to the class and demonstrate. This sounds like an excellent opportunity for a field experiment. Plant some rewards around the school yard and give the kids directions to the items based on sun directions and plant signs.

Of course the North Star is obvious. So you would have to plot the location of the moon and other stars in relation to it, if you want specific direction. Make sure you figure in Dates to yo plotting graphs, because the moon rises at a different time every night, and occasionally shares the sky with the sun.
And have them research the sun - one days' travel - and plot it. They can then memorize where it is at certain times of the day, and practise navigating that way.
And on the ground, use the visuals that are right in front of you. Have them research which side of the tree moss grows on, for example. (it always grows on the same side) Then they can plot a course accordingly.
Have them research a hardback encyclopedia, under Navigation, to see what they can use to create a system that works for your needs. Or do that research together, if you have a wide age range / grade level.
"Encoding" is a skill we are losing due to internet. But important if you want to hone investigative skills. It sounds like that is what you are trying to do.

First of all, post signs in your classroom that show the true direction of the compass. For example, my classroom windows are on the north side of the room, while my board is on the south.
Try using basic landmarks and post them around the room based on location. You could even make one for each student and have them try to place them. You could use things like St. Paul's, Stonehenge, New York, Scotland, etc.
Another way is the Simon Says type game. You can draw a big chalk circle compass on the playground. The kids can stand in the middle and you can yell out directions for them to run or point.
