Actually, it isn't just bull. I've heard Horse****, as well. One can be a chicken****, something can be as funny as monkey****, as poor as pig****, ugly as dog****.
Why animal dung is a simile for so many things is beyond me.

Because of all the animals, cow and bull waste is dryer and can be held without getting much on your hands. In fact, some people make sport of tossing it.
I have heard of someone calling someone else cowardly by referring to them as a chicken "poop".
