i am looking to apply for university as a mature age student, who has been out of education for a while, any hints on preparing my personal statement and guidelines of what they are looking for.

Good for you!

Here are some guidelines.

Write about things that the university should know about you. Tell them what you've done with your life, what you've learned, why you want to learn more by enrolling at a university, and what valuable perspectives and skills you would bring to that university that would enhance the learning experiences of others.

Make sure your narrative flows smoothly, and make sure it is literate and contains no typos or grammar/syntax problems.

View it as an opportunity for the folks in the admissions office to get to know you. Don't be afraid to be personal, and don't be afraid to state, without apology, your strengths and your desires.
