I live in the U.S. but you can start by collecting coins from your change. The UK does put out circulating commemoratives. You may want to put a set of dates together of a certain denomination. Coin collecting is really not much different from country to country. You can collect a series by dates or you can put a type set together, one coin of each type made. In London there are a lot of coin dealers, a few are world famous. Just look up coin dealers and hit the shops. If they are friendly and answer your questions then go with them. Unfortunately there are some that won't be bothered with you, for they think you will not spend enough money, to make it worth their time to help you. It is like that here as well as Canada. I know that for a fact. If a dealer helps you and lets you pick his brain so to speak, then he is worth your time and money.

I don't know about in the U.K., but here in Louisiana I've seen collectable coins in the pawn shops.
