The original reason to the mirrors behind bars was in the old west. In the day of desporatoes and cowboys. The mirror was put in to help protect people at the bar. With the mirror no one could sneak up on them so that way they can draw their pistol and protect themselves. That is what I know.

I always thought the mirror at the back of the bar was to increase the lighting inside the bar. The reflection of the oil lamps, which were not that bright increased and people could see their drinks and each other.
There is probably other speculations like the guys at the bar could see who was coming up from behind him. ;-)

bar back mirrors are there so that no one can drink at bar back without being noticed. also it helps the drunk to feel he already has drunk double and pays more (courtsy mirror- double)
