i agree it is the optimum body temp and all the reactions occur at this temp in normal cases.
but here we r forgetting that the main purpose of incubation is to give the optimum conditions of growth to the micro organisms so that they can grow to the maximum.
Also understand that at this temp not all microbes will grow but only those whose optimum growth temp is 37 will be able to thrive. those with optimum temp lower than and higher than 37 will not be selected
