Depends on the temperature range, what is used as fluid, but it is simply bases on expansion and contraction of a fluid.

If you look at a standard mercury and an alcohol thermometer.

They look the same, as the temperature rises the fluid in the bulb expand and then enter the tube a capillary, this has a markings and marking are calibrate to read the temperature.

For lower range, Alcohol is more suitable but for higher range Mercury is more use full.
