Casino Royale would be my first choice, I'd love to see how a Bond film was made especially this one, I'd really like to see how they put together the free runnning scene where Bond is chasing after that guy. Also a chance to meet Daniel Craig and Eva Green would be amazing. :D
I'd also say the set of the three Back To the Future films.

I would love to have seen the set for The wizard of Oz - Labyrynth - Charlie and the Chocolate factory (the Gene Wilder version) - Jurasic Park (all of them)

I would love to have been on the set of any of the following:
Anne of the thousand days as I adore the story and the historical locations must have been lovely...
Twelve Angry Men - To see all those great actors perform in one area for such a long time...
Ultimate: Citizen Kane - I would have loved to have seen Orson Welles direct etc that must have been amazing to see...

I would love to go onto the sets of X-Men, Pirates of the Caribbean, Harry Potter and Nightmare on Elm Street. I would love to see how my favourite movies were made and talk to the cast.
